It’s zucchini season! Time to get creative with your zucchini recipes!
Every summer, around mid-July, I find myself with a lot of zucchini and wonder if I've tried all the recipes.
I've made zucchini bread, fritters, zucchini casserole, and zucchini chips. But I always ask, “What else can I make with zucchini?''.
If you feel the same, don’t worry: zucchini can do it all! It tastes great in pasta, tacos, salads, and even chocolate cake!
You can grill it, bake it, sauté it, or eat it raw.

How Do You Cook Zucchini Without Being Soggy?
To cook zucchini without getting soggy, the best tip is to use high heat and cook it quickly.
Here are some specific steps to achieve this:
🔥 Preheat your cooking surface: Whether you're using a skillet, grill, or oven, make sure it's preheated to a high temperature. This ensures that the zucchini cooks quickly and doesn't have time to release too much water.
🥒 Cut zucchini into uniform pieces: Slice the zucchini into even pieces, either rounds or sticks, to ensure they cook evenly.
🧂 Salt and drain (optional): If you have time, sprinkle the zucchini slices with salt and let them sit for about 15-30 minutes. This draws out excess moisture. Afterward, pat them dry with paper towels.
🧑🍳 Use high heat: Whether you're sautéing, grilling, or roasting, make sure to cook the zucchini on high heat. For sautéing, use a large skillet with a bit of oil and cook the zucchini in a single layer without overcrowding the pan.
👁️ Cook quickly: Zucchini cooks fast, usually in just a few minutes. Keep an eye on it and stir or flip it as needed to ensure it cooks evenly without getting mushy.

NO - Zucchini does not need to be peeled before cooking. The skin is thin, tender, and edible, providing additional nutrients and fiber.

To achieve crispy zucchini fritters, make sure to drain excess moisture from the grated zucchini, add a binding agent like flour or breadcrumbs, and fry the fritters until they are golden brown and crunchy on the outside.
To fry zucchini without it getting mushy, slice fresh zucchini evenly, sprinkle with salt, and let it sit for 15-30 minutes before patting it dry.
Coat the slices lightly in flour or breadcrumbs, then fry in hot oil in small batches for 2-3 minutes on each side until crispy and golden brown, and drain on paper towels before serving.
