These baked Cheesy Summer Squash Zucchini Bites are easy, super flavorful and a great meal prep idea for a weekday dinner night.
They are loaded with summer squash zucchini, garlic, mushrooms and two types of cheese - blue cheese and parmesan cheese. All this yumminess is served with a creamy avocado yogurt dressing for a mind-blowing culinary experience!

Last week I got a lot of summer squash zucchinis fresh straight from the market. I wanted to create one recipe but ended up making at least 3-4 different squash recipes. Haha!
Well, I guess you’ll be seeing a lot (maybe too many) squash recipes in the near future. Sorry!
But why not? These kind of dishes taste the best when they are made with produce that is fresh and in season. Right?
All these recipes are yummy, hearty, healthy, and easy for you to make. And these baked Cheesy Summer Squash Zucchini Bites fall perfectly into this category.

Ingredients
By the way, feel free to swap this gray zucchini to any other squash type, all of them will taste de-li-ci-ous. You can even mix in some sweet potato or regular potato if you’d like.
For the Cheesy Summer Squash Zucchini Bites you'll need:
- summer squash gray zucchini, medium, grated and drained
- egg
- breadcrumbs
- Parmesan cheese (or semi-mild cheese), grated
- blue cheese, grated
- onion, small
- garlic clove, minced
- dried oregano
- Salt and pepper to taste
For Avocado yogurt dressing you’ll need 5 ingredients:
- Greek yogurt or plant based yogurt
- avocado
- salt
- cilantro (or parsley if don’t like cilantro)
- lime juice
How To Make Cheesy Summer Squash Zucchini Bites
1. Preheat oven to 400F. Line baking sheet with parchment paper. Brush the surface lightly with olive oil.
2. Wash and (peel, but not necessary) zucchini. Finely grate it into a bowl. Then transfer and wrap it into a thin kitchen towel placed over a strainer and a bowl in the bottom. (See images)
3. Twist the towel to wring out the moisture.
4. Cut the mushrooms and onion into small pieces.
5. Mince or crush the garlic using a garlic press/cutter.
6. In a large bowl, combine zucchini, breadcrumbs, mushrooms, garlic, onion, oregano, both kinds of cheese, salt, and pepper and mix well.
7. Shape the mixture into small one tablespoon-size balls (using your hands). Transfer to the baking sheet.
8. Bake for 20-25 minutes or until golden brown from the outside.
9. Garnish with parsley and serve with avocado yogurt on the side.
In the end, you should have around 16 bites.
Make the Avocado Yogurt Dressing
- Mash one avocado until creamy.
- In a small bowl simply mix avocado, minced garlic, yogurt, one tablespoon chopped cilantro (use parsley if not coriander lover). Taste for salt.
Another option is to serve these bites with spicy salsa or even both, salsa and avocado yogurt.
