These Chicken Zucchini Fritters are easy, super flavorful and a great meal prep idea for a weekday dinner night. They are loaded with zucchini, ground chicken, and dipped into flour to make them crunchy.
All this yumminess is served with healthy creamy avocado yogurt dressing.

Where I’m from, in our family we use to make meat patties (kotlety in Russian) quite often. It would normally consist of ground beef/pork mix, chopped onions, cooked rice, and bread dipped into milk 🙂 or even breadcrumbs.
That’s basically one of the classical kotleta recipes. Very tasty and juicy!
For some reason, my mom never made them with chicken at all. Or if she did, then it would be rare.
Now, I can’t go without making some chicken fritters once every other week. I'm serious, they are so good, tender, and juicy!
Healthier recipes are important now more than ever, as my toddler is just starting to grow and explore the world. And he does love them so much! Mind you, he is a picky eater!
These chicken fritters aka chicken patties are made with ground chicken, zucchini, salt, and flour. I usually make two different batches of these, half of them are just a few ingredients (for the kiddo) and for the other half
I like to add more flavor like a chopped white onion (add ½ of whole medium size white onion), fresh minced garlic (add 1 garlic clove), and cooked rice (add 2 tablespoons of cooked rice).
You too can play around with different flavors, spices and even swap zucchini to another veggie like carrot, cauliflower, spinach. But the main method will remain the same.
Very easy and quick to make and served with fresh salad on the side will fill your tummy for half of the day for sure!

Ingredients for Chicken Zucchini Fritters recipe
These chicken zucchini fritters are the world's most tender fritters I've ever tried! For this reason, they do require a little care when shaping them as the ground chicken is very tender on it's own.
You can swap zucchini to any summer squashes, carrots or spinach.
For this chicken fritters recipe you'll need just 4 ingredients:
- 1 lb ground chicken
- 1 ⅓ cup zucchini, grated
- 1 teaspoon salt
- 2 tablespoon flour (all purpose gluten free if desired)
+ vegetable oil for cooking
Dip: For Avocado ''Crema'' yogurt sauce:
- 3 tablespoon parsley, chopped
- 2 avocado
- 3 tablespoon greek yogurt (or substitute with sour cream)
- ½ teaspoon salt
- 1 teaspoon lemon juice
- ¼ teaspoon garlic powder
How To Make Chicken Zucchini fritters
STEP 1
Wash and (peel - optional, depends how young is your zucchini) zucchini. Finely grate it into a bowl.
Then transfer and wrap it into a thin kitchen towel placed over a strainer and a bowl in the bottom. Twist the towel to wring out the moisture.
STEP 2
In a separate bowl mix ground chicken, zucchini, and season with salt.
STEP 3
Shape the mixture into medium-sized balls using your hands (make your hands wet before shaping the balls).
Prepare a smaller plate/bowl for your flour and dip each chicken fritter into it right before transferring them to the pan (use a spoon as the fritters are very soft and tender).
STEP 4
In a medium skillet heat up olive oil and cook chicken fritters for 3-4 minutes both sides.
For the dipping sauce, simply mix all the ingredients in a bowl and you are ready to serve. Enjoy!
Can you freeze Chicken Zucchini Fritters?
Once the fritters are cooked, let them cool completely, transfer to a glass container with a lid (add layers of parchment paper in between the fritters) and pop them into the freezer. They'll be good for up to 2 months.

NOTES

- For more flavor add chopped onion, garlic, spinach to your ground chicken mix.
- Sauce - add more yogurt (or sour cream, creme fraiche) if want a thicker consistency, add little by little until you reach the desired result. Please add seasoning to the taste as well.
- Squeeze a little bit of lemon or lime juice on top of hot chicken zucchini fritters before serving.

Easy with a very tasty sauce but the patties are pretty bland so hoping someone has come up with a great seasoning combo. I tried onion, chives, oregano with marginal results. Also i will try baking next batch and using dark meat to boost flavor.
