    Easy Stuffed Bell Peppers

    These stuffed bell peppers are easy to make, quick and filling. This recipe has the best of simple ingredients – fresh bell peppers, ground beef, onions, tomatoes, cheese and the right seasonings that come together in a beautiful tasty meal.

    This recipe is classical and has become a tradition in our family. These stuffed peppers are so easy to make and taste delicious that even your picky eaters will love.

    You can make different peppers each time - just use different ingredients, seasonings and either cut the peppers in half or cut the tops off and fill them with all the goodies. It'll look like a new recipe each time!

    As I already mentioned, these stuffed peppers recipe is fairly customizable.

    You can:

    • swap the ground beef to chicken or turkey, 
    • make meatless vegetarian stuffed peppers by adding lentils, quinoa, or beans as your main ingredients instead of meat.
    • fill the peppers with roasted vegetables and mushrooms.

    Which pepper is the most nutritious?

    Red peppers have the most nutrition because they’ve been on the vine longer. Green peppers are harvested earlier, then yellow, orange and red. 

    Red peppers also taste more sweet, yellow ones semi-sweet and green ones can taste a bit bitter.

    Ingredients for Easy Stuffed Bell Peppers Recipe

    For this recipe you'll need 11 ingredients (most of them you already have on hand for sure!):

    • olive oil
    • bell peppers
    • onion
    • ground beef
    • ground oregano
    • basil
    • salt and pepper to taste
    • crushed tomatoes (can use fresh as well but can be juicier)
    • cooked rice
    • semi mild cheese, grated
    • garlic

    How to make and cook stuffed bell peppers

    STEP 1

    Preheat oven to 350 F.

    Wash and cut bell peppers lengthwise and remove seeds. Brush generously with olive oil all over the peppers and transfer to a baking sheet lined with parchment paper, bake until they are soft. (15-20 minutes).

    STEP 2

    Meanwhile, on a large pan saute onion and garlic. Add 2 tablespoon oregano, 1 teaspoon basil, cook a bit more and then add the beef. Salt and pepper to taste. Cook the beef until brown but my advice, let it be slightly undercooked because they’ll go in the oven right after.

    STEP 3

    Add can of crushed tomatoes, mix well and add cooked rice. (cook for 5 minutes)

    STEP 4

    Next, in a small bowl mix grated cheese and 1 teaspoon oregano. Set aside.

    STEP 5

    When peppers are cooked take them out of the oven and fill in with just prepared beef mixture. Fill the peppers fully and top with grated cheese mix.

    STEP 6

    Pop in the oven on the same parchment paper and bake for about 20 minutes and until cheese is properly melted.

    Serve immediately!

    What do I serve with stuffed bell peppers?

    You want to go easy with side dishes. The best choice is to serve them with simple easy and healthy green salad.

    For a heavier meal, you can make boiled or mashed potatoes or sweet potato fries.

    Any of course you can't go wrong with roasted vegetables like zucchini, squash, artichokes, and cauliflower or any of other your favorites!

    Can you reheat stuffed peppers?

    Of course! They taste much better when they’re warm. Reheat them in the oven, skillet or microwave.
