What These Healthy Breakfast Tacos Are Made Of

These egg tacos are quick and easy, delicious, and packed with flavor! Here’s what you’ll need to whip up this tasty breakfast:

Tomato Salsa:

  • Jalapeno - Start with 1 tablespoon of diced jalapeño for a spicy kick. Feel free to add more if you like it hotter! Don't like it hot? No problem, I like to add green bell peppers instead, especially when serving these for my son.
  • Red onion - Use ¼ cup of diced red onion for a bit of sweetness and crunch.
  • Cilantro - A tablespoon of chopped cilantro adds freshness to the salsa.
  • Tomatoes - Dice up 1 cup of fresh tomatoes for a juicy base. Cherry or plum tomatoes are excellent too!
  • Lime juice - Squeeze the juice of half a lime to brighten up the flavors.
  • Bell pepper - Red or green. Peppers add sweetness but you can skip it and use just tomatoes.

For the Tacos:

  • Eggs - I used 6 eggs, but you can increase depending on how fulfilling you want your tacos (and for how many people serving).
  • Salt and black pepper - Season these tacos well!
  • Green onion - Adds a mild onion flavor and a pop of color. I added them for topping but you can mix it in the scrambled eggs as well.
  • Tortillas - Use taco-size tortillas, either corn or wheat, to hold all your delicious filling.
  • Avocado - It's creamy texture that pairs perfectly with the eggs and salsa. Also try avocado crema or guacamole on top, so good!
  • Feta cheese - I think these tacos will lack a lot of flavor if you skip this ingredient! Feta adds essential creaminess and savory flavor.
  • Lime wedges - Just like with street or beef tacos, you'll need some fresh lime juice right before serving!

How To Make Breakfast Tacos

  1. Salsa: Mix all the ingredients together to make the tomato salsa. Beat the eggs in a bowl and season with salt and pepper.
  2. Scrambled eggs: Heat some cooking oil in a skillet over medium-high heat and scramble the eggs to your liking. Set them aside.
  3. Warm the tortillas in a dry skillet until they get a light char.
  4. Assemble the tacos by placing the scrambled eggs on the tortilla, followed by the tomato salsa. Top with feta cheese, avocado slices, cilantro, green onions, and a squeeze of lime juice just before serving.

Tips for Making the Best Breakfast Tacos

  • Serving style. If you don’t have tortillas, you can turn these tacos into a burrito bowl by serving the filling over rice. Or serve it on top of lettuce wraps.
  • Customize your spice. If you like a bit of heat, add pickled or fresh jalapeños on top. The spiciness pairs wonderfully with the creamy feta. You can also drizzle some hot sauce for an extra kick!
  • Explore fillings. Feel free to get creative with your fillings! You can use different proteins like ground chicken, turkey, or beans, and add any veggies you enjoy.

How to Heat Tortillas

Heating tortillas is easy, and there are a few methods you can use, depending on the type:

  • Flour Tortillas: For a crowd, flour tortillas are the easiest. Wrap two stacks of four tortillas in foil and place them in a preheated oven at 300°F for about 15 minutes, or until they are heated through. Keep them wrapped in the foil to stay warm until you're ready to assemble your tacos.
  • Corn Tortillas: Corn tortillas are best warmed individually. You can toast them on a dry skillet or over a medium-low flame on your gas stovetop. Just be sure to flip them often with metal tongs to prevent burning.
  • Hard Taco Shells: If you prefer, you can use crispy fried hard taco shells instead of soft tortillas.

Pro Tip: Keep your warmed or toasted tortillas wrapped in foil while you prepare the other taco ingredients. This helps them stay warm until you’re ready to use them!

Freezing And Storing Instructions

  • To Store. Store the ingredients separately in airtight containers in the fridge to keep your breakfast tacos fresh. Keep the tortillas and filling apart from the toppings to maintain their texture.
  • To Freeze. For freezer-friendly tacos, skip the toppings (like avocado, tomato, and cheese) and fold the tortillas (I recommend using larger tortillas for this) with the filling like a burrito. Wrap each taco in foil and place them in a freezer bag. They can be stored in the freezer for up to three months.
  • To Reheat. To reheat frozen tacos, preheat your oven to 400°F. Place the wrapped tacos (still in foil) in the oven and bake for about 10 minutes, or until heated through. Enjoy!

Variations and Substitutions

  • Add tangy flavor. Top your tacos with pickled jalapeños or pickled red onions. A dollop of sour cream or vegan sour cream adds a nice creamy touch!
  • Protein swaps. Try shredded chicken, turkey, or crumbled sausage for a different protein. For a hearty vegetarian option, try refried black beans or pinto beans.

INGREDIENTS
  

For Egg Tacos

  • 6 eggs, beaten
  • olive oil for cooking
  • salt and black pepper to taste
  • ¼ cup green onion, diced
  • 6 taco size tortillas, corn or wheat
  • 1 medium avocado, sliced
  • ½ cup feta cheese, crumbled
  • lime wedges, for serving
  • cilantro , for garnish

Tomato Salsa

  • 1 tablespoon jalapeno, or more, diced
  • ¼ cup red onion, diced
  • 1 tablespoon cilantro, chopped
  • 1 cup tomato, diced
  • half of a lime juice
  • salt and black pepper to taste
  • ¼ cup bell pepper, diced

INSTRUCTIONS
 

  • Make the tomato salsa by mixing all the ingredients together. In a bowl, beat the eggs and season with salt and pepper.

  • Heat some cooking oil in a skillet over medium-high heat and scramble the eggs to your liking. Set them aside.

  • Garnishes: Fresh cilantro adds a burst of flavor, and you can include sliced or diced jalapeños for some heat.
