You'll need only a few ingredients for these Cheesy Potatoes:

- cheese
- bacon
- green onions
- mayo (or use yogurt or cream cheese instead)
HOW TO MAKE MISSISSIPPI MUD CHEESY POTATOES?
- In a 9 x 13 baking pan, combine the potatoes, bacon, garlic, cheese, and onion.
- Add in the mayonnaise and stir until coated.
- Place pan in the preheated oven, 325 degrees, and bake for about 1 ½ hours, or until potatoes are tender.
- Remove from oven and serve!

Mississippi Mud Cheesy Potatoes
INGREDIENTS
- 12 medium potatoes (peeled and diced)
- 2 cups cheddar cheese (grated)
- 1 1 lb package bacon (cut and cooked)
- 1 teaspoon garlic salt
- ¾ cup mayonnaise
- ½ cup green onions (thinly sliced)
INSTRUCTIONS
- Preheat oven to 325 F.
- In a 9 x 13 baking dish, combine the potatoes, bacon, garlic, cheese, and onion.
- Add in the mayonnaise and stir until all the potatoes are evenly coated.
- Place pan in the preheated oven, and bake for about 1.5 hours or until potatoes are tender.
- Remove from oven and serve!
NOTES
- It is not necessary to cook the bacon before, but it adds a bit more crisp to the potatoes in the end.
- If you are in a rush, simply leave the potatoes unpeeled. It also adds extra nutrition!
- You can also use yogurt or cream cheese instead of mayo.
