My favorite way is to bake them in air fryer - they turn out to be super crisp and healthier than fried.

With three easy methods—air frying, baking, and deep frying—you can pick the one that fits your kitchen setup and mood. Let's dive in!

What Are Truffles?

Truffles are a type of fungus prized for their earthy, umami-packed flavor. They’re often called the “diamonds of the kitchen” because of their luxury status.

Truffle oil, made from infusing oil with the essence of truffles, is an easy and affordable way to bring that gourmet flavor to dishes like these fries.

Ingredients and Substitutions

  • Russet Potatoes - Perfect for fries because of their high starch content. Yukon Golds work too, but they’ll be softer.
  • Olive Oil - Helps the fries crisp up in the oven or air fryer.
  • Truffle Oil - Adds that signature flavor—white or black truffle oil both work here.
  • Parmesan Cheese - Freshly shredded for the best texture and flavor.
  • Salt - Simple but essential. Adjust to taste.
  • Parsley - Adds a fresh, vibrant finish. You can swap for chives if you prefer.

How to Make Parmesan Truffle Fries

My Fav Method: Air Fryer

  1. Prep the Potatoes: Peel (optional) and slice the potatoes into fries. Soak them in an ice bath for 5-10 minutes to remove excess starch, then drain and pat dry thoroughly.
  2. Season: Toss the fries with olive oil and arrange them in a single layer in the air fryer basket.

  1. Cook: Air fry at 375°F (190°C) for 35-40 minutes, shaking the basket halfway through, until crispy and golden brown.
  2. Add Truffle and Parmesan: Transfer hot fries to a mixing bowl, drizzle with truffle oil, and toss.
  3. Sprinkle with Parmesan cheese and chopped parsley, then serve immediately.

Alternate Methods

I have a separate recipe for oven-baked fries.

Oven-Baked

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the fries as above, coating them with olive oil.
  3. Spread the fries in a single layer on a parchment-lined baking sheet. Bake for 30-35 minutes, flipping halfway through.
  4. Drizzle with truffle oil, sprinkle with Parmesan and parsley, and serve hot.

Deep Fried

  1. Heat vegetable oil to 350°F (175°C) in a deep fryer or large pot.
  2. Fry the potatoes in batches until golden brown, about 3-5 minutes per batch.
  3. Drain on paper towels, then season with the truffle oil, Parmesan, and parsley while still hot.

Make-Ahead and Storage

  • Prep Ahead: Cut and soak the fries up to a day in advance. Store them in cold water in the fridge, then drain and dry before cooking.
  • Storing Leftovers: Keep cooked fries in an airtight container in the fridge for up to 2 days. Reheat in the air fryer or oven to crisp them up again.
  • Freezing: Blanch the fries (quickly boil, then cool them), pat dry, and freeze in a single layer. Cook straight from frozen using your preferred method.

Chef Notes + Tips

  • Crispier Fries: Make sure to dry the potatoes thoroughly after soaking. Excess moisture will make them soggy.
  • Truffle Oil Caution: A little goes a long way—start with less and add more if needed.
  • Even Cooking: Don’t overcrowd the pan, air fryer, or baking sheet. Fries need space to crisp up.
