    Cold Pasta Salad With Smoked Sausage-The Yummy Bowl

    A simple and savory cold pasta salad made with smoked sausage (or salami), veggies, gluten free pasta and Oregano Mustard Vinaigrette salad dressing. Can be served hot or cold to fit any season!

    I love one good and simple meal. I could easily survive eating only salads for lunch and dinner. Especially the ones which have sausage or pasta in it.

    One of the things I like most about this pasta salad recipe is that you can chill leftovers and have an equally delicious salad later in the week.

    You can use any kind of pasta, any kind of dressing, and add tons of garden fresh vegetables if desired.

    Plus, it can be served warm or cold. It is simply YUMMY! The possibilities are limitless.

    What ingredients you'll need for this Cold pasta Salad recipe

    • parmesan
    • pasta (gluten free if preferred)
    • cherry or plum tomatoes
    • red onion
    • cucumbers
    • black olives
    • parsley

    This is just the base and few ingredients that I had on hand and threw everything together.

    You don't have to use the same exact veggies, just use whatever you have but don't skip the sausage and cheese these are the key ingredients for a flavorful pasta salad.

    How To Make Cold Pasta Salad with smoked sausage

    Delicious lunch in 3 easy steps!

    STEP 1

    Cook pasta according to package directions. Season with salt.

    A simple and savory cold pasta salad made with smoked sausage (or salami), veggies, gluten free pasta and Oregano Mustard Vinaigrette salad dressing. Can be served hot or cold to fit any season! #pastasalad #italianpastasalad #easypastasalad #pastasaladdressing

    STEP 2

    Drain the pasta, let cool, and place in a large bowl. Stir in all the prepared salad ingredients and drizzle with Oregano Mustard Vinaigrette dressing, toss to coat.

    Try my Cashew Pesto next time instead of this dressing. Makes a delicious BBQ meat side dish.

    STEP 3

    Serve with fresh parsley and more grated parmesan on top. You can serve this salad warm or chilled.

    Store in the fridge in an airtight container for 3-4 days.

    INGREDIENTS

    • ⅓ cup parmesan (grated or chopped)
    • ¾ oz pasta (gluten free if preferred)
    • 12 cherry tomatoes (cut in half or quarters)
    • 1 red onion (large, diced)
    • 2 small cucumbers (or ½ large, sliced)
    • 5 oz black olives (drained, pitted, sliced)
    • 2 cup parsley (chopped)
    • 2 bell peppers (1 red 1 yellow)
    • 4 oz salami or smoked sausage (sliced or cubed)

    INSTRUCTIONS

    • Cook pasta according to package directions. Season with salt.
    • Drain the pasta, let cool and place in a large bowl. Stir in all the prepared salad ingredients and drizzle with Oregano Mustard Vinaigrette dressing, toss to coat. You can serve this salad warm or chilled.
    • Serve with fresh parsley and more grated parmesan on top.

    Tip. Let the pasta soak in the dressing flavors before serving.
     
    Sausage. - any of your favorite smoked sausage, salami, or Polish Kielbasa sausage will work best in this recipe!
