    If you have followed me for a while, you know how much I love oatmeal porridge recipes. Here are few of my favorites: Spiced Oatmeal with Pear and Chocolate Porridge.

    Breakfast doesn't have to be boring or the same thing every day. It's really enough to add few different toppings everytime to your oatmeal, throw organic and healthy powders like Pitaya and you have a beautiful start to your day.

    First things first...

    What's the best fruit for oatmeal porridge? Some of my favorite toppings for oatmeal are fruits, berries, homemade mini chocolates (more on that below) coconut flakes, and flaxseed. During fall and winter time I usually love to enjoy a nice big cozy bowl of Spiced oatmeal, Creamy Oatmeal Porridge With Grapes And Apricots or top up my porridge simply with few spices, or fruits especially bananas lightly fried in cinnamon and brown sugar.

    What is PITAYA POWDER?

    Okay, so what is a Pitaya powder?

    Pitaya is the fruit of several different cactus species indigenous to the Americas and is cultivated throughout tropical and subtropical world regions. 

    Have you ever tried Dragon Fruit in Asia? That would be the closest you can get because Pitaya or Pithaya is in fact Dragon fruit. It is a pink/red/yellow-skinned cactus like fruit with pink, yellow or white flesh inside with a similar texture of a kiwifruit. 

    Dragon fruit fresh or in form of (Pitaya) powder is used to naturally flavor and color different foods, juices and alcoholic beverages.

    What does Pitaya taste like? - well unfortunately it doesn’t have a very flavorful and powerful taste despite it bright appearance. It has soft texture, very much similar to watermelon and with tiny seeds just like kiwi. The truth is, it doesn’t have much taste at all, slightly melon or watermelon notes. I always think that there should be much more to it and maybe I haven’t tried the best dragon fruit yet. What do you think? Have you tried one?

    Ingredients

    I make most of my porridges the same way, and if I can I always add coconut milk which makes the porridge extra creamy and helps it not to dry out so fast.

    • ¾ cup regular or non-dairy milk
    • ½ cup coconut milk
    • ⅔ cup oats GF if desired
    • 1-2 tablespoon organic Pitaya powder
    • Pinch of salt
    • 1 teaspoon Cinnamon
    • Honey, maple syrup or brown sugar to taste for sweetness
    • Toppings of your choice

    Depending on your toppings you can add a sweetener like honey, organic maple syrup. In this porridge, I’ve added chocolate on top which is sweet enough already:)

    A quick note about OATS - Pure oats are naturally gluten-free, however, they are processed and manufactured in the same places with gluten-containing grains like barley, wheat, and so on. To be safe, I'd recommend choosing products with a special ''Gluten Free'' label on them.

    How to make Pink Oatmeal

    Add milk to a pot and bring to a simmer.

    Add in the oats, salt, and cinnamon.

    Cook, stirring occasionally for the porridge not to stick to the bottom of the pot. Stir until the oats are creamy and have absorbed the liquid, about 5-8 minutes. Add a little more milk or water if needed.

    Add in the pitaya powder and coconut milk. Stir well!

    Remove from the heat, cover with a lid and set aside for 2 minutes.

    Transfer to serving bowls and decorate with your favorite toppings.

    Recommended topping ideas I usually like to use: peanut/almond butter, fresh berries, coconut flakes, chia seeds, flaxseeds, homemade mini chocolate bars, chocolate chips, chopped nuts, banana.

    There are some options you can buy mini chocolate bars from the stores, but homemade is way better! Here's how to make this.

    How to make mini chocolate bars

    Very simple! You'll need about ½ cup chocolate chips of your choice, a tablespoon of coconut oil and some coloring like Pitaya powder or other natural food coloring. Melt the chocolate and coconut or vegetable oil (or sub with butter) using double boiler method or in microwave. Add natural food coloring or your favorite powder or similar and pour into candy molds. Freeze for 2-4 hours or overnight for best results and use in your favorite recipes to garnish smoothies, milkshakes, cupcakes, oatmeal porridges).

    INSTRUCTIONS

    • Add milk to a medium pot and bring to a simmer. Add in the oats, salt, and cinnamon. Cook, stirring occasionally for the porridge not to stick to the bottom of the pot. Stir until the oats are creamy and have absorbed the liquid, about 5-8 minutes. Add a little more milk or water if needed.
    • Add in the pitaya powder and coconut milk. Stir well!
    • Remove from the heat, cover with a lid, and set aside for 2 minutes.
    • Transfer to your favorite serving bowls and decorate with your favorite toppings.
