Waffles aren't only sweet and served with ice cream but they can be a yummy savory option for serving breakfast, lunch, or even dinner. Kids love them too!
And what they love even more? Is when you involve them in making the waffles. Let them measure out the ingredients, flour, water, and help with mixing everything. They are more likely to finish their plate after this!
INGREDIENTS
- 6 eggs
- 2 potato, cooked and mashed or cut into small cubes
- 1 tablespoon salt
- 3 tablespoon olive oil
- ½ cup all-purpose flour, sifted or gluten free blend for baking
- ⅔ tablespoon baking powder
- 4 stalks of spring onion, chopped
- 1 tablespoon bell pepper, chopped
- ¼ cup semi-hard cheese, grated
- 1 oz feta cheese, crumbled
- 1 teaspoon oregano

How Do You Make Savory Waffles from scratch?
STEP 1
Preheat your waffle maker and spray with cooking spray or brush with olive oil. (Make sure to do it on both sides)
STEP 2
In a large bowl, whisk the eggs, salt, and oil. Sift the flour and baking powder over the bowl and then mix together until the batter is smooth.
STEP 3
Mix in the potato, bell pepper, feta, cheddar, spring onion and oregano or Italian herb mix. Add pepper to taste.
STEP 4
Pour mixture evenly onto waffle iron, enough to fill the surface but not too much as it will expand when you close the lid. Close the lid and cook for about 5 minutes or until golden and firm. Don’t open iron too soon as it may affect your waffle end result. (I'm so guilty not following this step all the time!)
STEP 5
Carefully transfer to a plate or keep the waffles warm before serving in a warm oven. Repeat with the rest of the batter. Depending on the size and depth of your waffle iron you should get around 4-5 waffles from this recipe.
STEP 6 - SERVE
Once the waffle omelette is cooked, you can serve them with guacamole, sour cream, or Greek yogurt, with a very simple side salad or add some toppings of your choice like bacon, sausages, mushrooms.
Tips & Variations
- Use greek yogurt instead of sour cream and mix in some lemon juice, coriander or make a fresh homemade tzatziki sauce.
- You can use any vegetables you like for the batter - tomatoes, mushrooms, onions, carrots, zucchini, broccoli. Just make sure not to overload and go too far with toppings as you may end up scraping off your waffles from the waffle iron.
- Goat cheese instead of feta cheese.
- Can you eat waffles for dinner? Absolutely! Add some chicken, fresh salad, bacon, sausages, pulled pork, tuna to your cooked waffles when serving and it will turn into a wholesome meal. Breakfast for dinner, why not? 🙂
- Add some butter on the cooked waffles when serving.
- You can add more potatoes and reduce the number of eggs if you like. The end result will be similar to hashbrowns.
- Dairy-free. Use plant-based cheese as a sub.
- Make it hot! Add chili flakes or tabasco, yum!
