Strawberry pistachio galettes – The easiest and most delicious strawberry dessert recipe. These mini yummy strawberry galettes are made with cottage cheese, fresh strawberries, and topped with crushed pistachios.
Simple homemade strawberry ”mini pie” recipe that no one can’t resist.

What ingredients you’ll need to make a Strawberry Pistachio Galettes From Cottage Cheese Dough?
For the Strawberry Galettes from Cottage Cheese base you’ll need:
- cottage cheese
- butter
- all purpose flour
- egg
- white sugar
- vanilla extract
- salt
For the Strawberry filling you’ll need:
- strawberries
- cornstarch
- brown sugar
- pistachio
- powdered sugar
Equipment: Pastry cutter, Silicone Pastry Mat, Measuring Cups
How To Make Strawberry Pistachio Galettes From Cottage Cheese Dough
STEP 1
In a large mixing bowl, combine cottage cheese and stir until smooth texture. Add egg, white sugar, and salt.
Blend to combine. Set aside.
STEP 2
In a separate mixing bowl, combine flour (sifted) and butter using a pastry cutter. Blend until well combined.

Add this mixture to the earlier prepared cottage cheese mix. Combine to combine and start kneading the dough to form one large ball.
The dough shouldn’t be sticky at this point so it will be easy to form one even dough ball.

Wrap the dough ball in plastic wrap. Refrigerate for 1 hour.
STEP 3 – Prep The Filling
Meanwhile, prepare strawberries. Cut small ones into half or larger into 4 pieces.
Chop pistachios.
STEP 4
After 1 hour, remove the dough ball from the fridge and plastic wrap and cut into 4 sectors.
Preheat oven to 350 F.
Form 4 dough balls. On a floured surface, roll each of the dough balls out to an even circle, about 7-8 in diameter.
Transfer the circles onto baking sheet lined with parchment paper.
STEP 5
In the middle of the circles, sprinkle 1 tsp cornstarch and arrange strawberries (leaving a bit of space around the edges), top with brown sugar.
Fold the edges up so it covers the outside circles of the strawberry filling.


Transfer to oven and bake for 25-30 minutes.
STEP 6
Remove from the oven and let the strawberry ”mini pies” to cool a bit.
Garnish with pistachios and powdered sugar and serve!
From this dough recipe you can make either 4 large strawberry galettes or 6 smaller strawberry galettes. One large equals to 2 servings.

What Is A Galette?
It’s a French term (meaning ”flat cake”) that describes a flat round or freeform cake.
Is Galette A Pie?
For me, it is – a delicious strawberry mini pie.
A galette comes from a French pastry and is similar to a tart or a pie. It’s basically a folded pastry dough with a berry or fruit filling, sugar, and butter.
In this recipe, I’ve modified the original galette recipe by adding cottage cheese and pistachios. So it’s not a traditional galette that you would be served in France but quite similar.
Besides, cottage cheese makes a perfect ”pie” crust that is crispy from the outside and so soft in the inside. Yu-mmyy!

Strawberry Pistachio Galettes From Cottage Cheese Dough Variations
- Add sliced rhubarb to your strawberry filling
- Add a dollop of whipped cream or scoop of vanilla ice cream to each strawberry galette when serving
- Swap strawberries to blueberries, raspberries, bilberries
- Instead of berries try fruits like apples, peaches, plums, apricots
