    Sweet Potato Buddha Bowl with Tahini Dressing

    This healthy Buddha Bowl is loaded with all good things for you - sweet potato, chickpeas, Lime Cilantro Rice, veggies and drizzled with delicious Tahini Dressing.

    Sweet Potato Buddha Bowl with Tahini Dressing

    Bowl food is the best food, isn’t it? Especially Buddha bowls!

    Everyone can find a few things they like to add to their dish and skip the items they don’t like which makes it a perfect family dinner meal. 

    And don’t skip the Sweet and Spicy Tahini dressing! You can never go wrong with Tahini Dressing!

    What is a Buddha Bowl?

    A Buddha bowl can mean many things, but usually, it is a one-dish meal, mostly vegetarian that has small portions of several different foods in it (grains, roasted veggies, raw veggies, dressing, and protein), served cold or warm.

    What is a Buddha bowl made of?

    In this Sweet Potato Buddha Bowl with Tahini Dressing recipe we will need the following ingredients:

    For roasted sweet potatoes and chickpeas 

    • 2 medium potatoes, 1-2 inch chunks
    • 1 13.5 oz can chickpeas, rinsed and drained
    • 1 ½ tablespoon coconut or olive oil
    • 1 teaspoon salt
    • ½ teaspoon ground cumin
    • ½ teaspoon chili powder
    • ½ teaspoon garlic powder
    • 1 teaspoon smoked paprika

    Grains

    • Lime Cilantro Rice

    Other essential garnishes and toppings

    • Bell peppers, diced
    • Avocado, sliced or diced
    • Red onion, sliced
    • Lime, wedges
    • Sweet and Spicy Tahini dressing
    • Flaky sea salt
    • Sesame seeds 
    • Cucumber 
    • Kale or lettuce

    Use the leftover roasted sweet potatoes and chickpeas to make delicious Sweet Potato, Chickpea, and Kale Tacos.

    For the toppings, feel free to use your favorite ingredients or use whatever you have on hand.

    How to make a Buddha Bowl?

    For roasted sweet potatoes and chickpeas:

    Sweet Potato, Chickpea and Kale Tacos (Vegan)

    In a large mixing bowl, combine potatoes, chickpeas, oil, spices.

    Stir together until everything is evenly coated. Preheat oven to 400F.

    Transfer contents of the bowl onto a baking sheet and spread it out into a thin layer. Bake on the center rack of the oven for 30-40 minutes, or until potatoes become soft. 

    Sweet Potato Buddha Bowl with Tahini Dressing

    Assembling the Buddha Bowl:

    Place the Lime Cilantro Rice or your favorite cooked grain in the bottom of a serving bowl.

    Top with roasted veggies and your chosen toppings.

    Drizzle with Sweet and Spicy Tahini Dressing or Peanut sauce and serve while warm!

    Are Buddha Bowls healthy?

    Most of the Buddha Bowl recipes are made with plant-based ingredients and contain a portion of vegetables, a portion carbohydrates, and a portion of protein making it a very healthy, and balanced meal.

    You can mix and match the ingredients and make it a different set each time, even adding chicken or fish as your main protein source. Make it 100% vegan or meat-based, it will depend on your diet.
