Easy & Quick Chicken Fajita Pasta

This chicken fajita pasta is a flavorful twist on steak fajitas, featuring tender chicken, fresh veggies, Ro-Tel tomatoes, and al dente pasta in a creamy, spiced fajita sauce.

Step 1

Heat 2 tablespoons of olive oil in a deep skillet or pot over medium-high heat, ensuring it's large enough for pasta and 2 cups of broth.

Once hot, add chicken and cook until no longer pink, then drain any juices.

Return to stovetop, sprinkle half the fajita seasoning over the chicken, and stir. Cook until done, then transfer to a plate. Add remaining oil, sauté onions and bell peppers with seasoning for 5 minutes until slightly wilted but firm.

Add garlic and cook for 1-2 minutes, then transfer veggies to a plate. Reduce heat to medium-low, then add broth, chicken base, cream, Rotel tomatoes, garlic powder, onion powder, and pasta. Stir and bring to a gentle boil.

Cover and simmer for 12-15 minutes, stirring occasionally, until pasta is al dente. Some sauce will remain, but the pasta will absorb more as it rests.
