These juicy Chickpea Burgers with Shimeji Mushrooms are a flavorful vegetarian alternative, topped with soy-marinated carrots and curried tahini sauce. Perfect for BBQs, picnics, or a midweek family meal!
Sauté onion, garlic, and spices. Add shimeji mushrooms and cook, then transfer to a food processor.
Add chickpeas, cilantro, yogurt, salt, and pepper. Blend on low until combined and slightly chunky. Form 4 patties, about 2 ½ tbsp each, and set aside.
In a bowl, combine marinade ingredients with carrots. Marinate for 30 minutes or longer.
Mix sauce ingredients and chill until ready to fry patties.
Assemble burgers with buns, lettuce, sauce, diced red onion, and marinated carrots.
