Quick & delicious Chicken Al Pastor! Zesty, earthy, and slightly spicy—perfect for tacos, tostadas, and more!
Blend all marinade ingredients until smooth. Toss chicken thighs and onions in the marinade, cover, and refrigerate for at least 5 hours or overnight.
Preheat oven to 425°F. Line a baking sheet with foil. Arrange marinated chicken, onions, and diced pineapple on the sheet. Bake for 15 minutes until almost cooked.
Chop the partially cooked chicken into bite-sized pieces. Return to the baking sheet and broil for 4-5 minutes until browned and crisp.
Serve in charred tortillas for tacos or with rice and beans for burrito bowls. Enjoy!
