Baked Chicken Taquitos are crispy tortilla wraps filled with creamy shredded chicken, spices, salsa, ranch, cheese, and corn, finished with a Sriracha mayo drizzle!
Preheat oven to 425°F, grease a casserole dish, and warm tortillas. Mix chicken, spices, corn, cheese, salsa, and ranch. Season to taste.
Place 2 tbsp of filling in each tortilla, roll tightly, and place seam-side down. Secure with toothpicks if needed.
Arrange taquitos in the casserole dish, spray with oil, and bake for 20-25 minutes until golden and crispy.
Broil for the last 5-10 minutes for extra crispiness.
