Enjoy a cheesy one-pan Ground Beef & Sweet Potato hash with tomatoes and melted cheddar—gluten-free, grain-free, and ready in 30 minutes!
Heat oil in a skillet, sauté garlic and onion until translucent, then add ground beef, and spices, and cook until browned. Drain excess grease.
Wipe skillet, add more oil. Cook sweet potatoes, tomatoes, and corn with seasoning.
Cover and cook for 15 minutes, stirring occasionally.
Return beef to the pan, mix well.
Top with shredded cheddar, cover until melted.
Serve with salsa, cilantro, or green onions. Add lime for extra flavor. Enjoy!
