Roasted Cajun corn on the cob is easy to make at home. Dip perfectly cooked corn in creamy Cajun mayo, top with crumbled cheese, and enjoy a crowd-pleasing summer side. Try one of my three methods!
Whisk olive oil, half the Cajun spice, half the paprika, garlic powder, onion powder, salt, and pepper in a bowl.
Brush each cob with the spice mixture, wrap in foil, and set aside extra for later use.
Bake at 425°F for 30 minutes. For softer corn, brush with more oil-spice mix and bake another 20-25 minutes.
Mix mayo, sour cream, remaining Cajun and paprika, lime juice, salt, and pepper.
Remove from oven, cool slightly, then brush with mayo mix. For a charred look, grill on a greased pan.
Top with parsley, crumbled feta or cotija cheese, and more Cajun seasoning. Serve warm!
