Preheat your air fryer to 375 degrees F. (Mine was 375 degrees Fahrenheit for 5 minutes) Cosori 5.8 quart

Trim the ends and cut the carrots in half. In a larger mixing bowl toss the carrots in honey, oil, rosemary, salt, and pepper. Set aside for 15-30 minutes.

Air fry for 12-15 minutes, shaking the basket halfway through a couple of times to ensure even frying. I like to add 2-3 fresh rosemary stalks.

Add crumbled feta cheese and fresh rosemary stalks on top when serving. Sweet and salty flavored carrots are best enjoyed as side dish or with dipping sauces.

The roasted carrots will be crispy, golden brown and cooked through until softened inside but not very soft like when baking.
