This Farmer’s Casserole is a savory, one-dish breakfast loaded with ham, hash browns, bell peppers, and cheese—quick to make and satisfying!
Grease an 8x11” or 9x9” baking dish. Evenly spread shredded hash browns in the bottom.
Layer ham, bell pepper, green onion, and jalapeno over hash browns. Add cheese on top or mix it in. Whisk eggs, evaporated milk, and spices, then pour over the casserole.
Chill overnight, then let sit at room temperature for 30 minutes before baking.
Bake at 350°F for 50-55 minutes until golden and set. Let sit for 10 minutes, garnish with parsley, and serve.
