Sauté garlic.

Add in rice and stir, until all the rice is coated in the garlic. Season with salt and pepper.

Toast the rice for 2-3 minutes, and pour in the veggie stock. Add lime zest. Cook for 20 minutes.

Serve in burritos, with tacos, fajitas.
