These coconut chocolate chip cookies are chewy, loaded with gooey chocolate chips, and have a hint of sweet coconut in every bite.
Beat butter and sugars until creamy. Add egg and vanilla; mix until combined.
Whisk dry ingredients, then gradually mix into wet ingredients until just combined.
Stir in chocolate chips and coconut. Chill dough for 30 minutes (or longer) until firm.
Preheat oven to 350°F. Form 1 ½ tbsp dough balls. Bake for 10–12 minutes until golden.
Let cookies cool on the pan for 5–10 minutes, then transfer to a wire rack. Enjoy!
