This Carrot Ginger Soup is warm, nourishing, and bursting with flavor! Made with turmeric, ginger, and sweet paprika, it's a simple yet delicious one-pot meal.
Preheat oven to 400°F. Mix spices, garlic, ginger, and oil in a bowl. Toss chopped carrots, potatoes, and onion in the mixture until coated.
Spread veggies on a lined baking tray. Bake for 30 minutes, turning twice, until fork-tender.
Mash roasted veggies with ½ cup broth using an immersion or high-power blender until smooth.
Transfer to a pot, add remaining broth, and simmer until creamy.
