This Butternut Squash Casserole is a simple, delicious holiday side—perfect for a stress-free Thanksgiving!
Preheat to 350°F. In a bowl, combine apples, butternut squash (or pumpkin), and cranberries.
Mix brown sugar, coconut oil, cornstarch, salt, nutmeg, and cinnamon. Toss to coat evenly. Transfer to a baking dish, cover with foil, and bake for 20-25 minutes.
Remove from oven, toss gently, and bake covered for another 30-35 minutes until tender.
Let cool for 10-15 minutes to thicken the liquid.
