Cook noodles as directed, avoiding overcooking. Meanwhile, mix sauce ingredients and set aside.
Marinate chicken (1 hour or overnight). Sear for 3-4 mins per side until golden, then set aside.
Sauté mushrooms in the same skillet, then add bell peppers, carrots, and garlic. Cook until tender but crisp.
Reduce heat, add sauce and green onions, and simmer until thickened. Return chicken and noodles, tossing to coat.
