Whip up this rich and creamy vegan mushroom stroganoff in just 30 minutes! Packed with flavor and made with simple ingredients, it's the perfect hearty and satisfying meal.
Heat oil in a skillet over medium heat. Sauté onion for 5 minutes until soft, then add garlic and cook for 30 seconds.
Add mushrooms and cook for 5 minutes until browned (don’t add salt yet).
Pour in white wine, broth, tamari, and seasonings. Bring to a boil, then add nutritional yeast.
Mix tapioca with milk in a bowl, then slowly pour into the skillet. Simmer for 10 minutes until thickened.
Adjust seasoning, stir in fresh herbs, and serve over rice, pasta, or mashed potatoes. Enjoy!
