Creamy Mushroom Chicken Thighs – rich, flavorful chicken with chanterelle sauce, cheddar, and spices.
Season chicken thighs with salt and pepper. Trim excess fat if needed.
Heat oil in a skillet over medium-high heat. Sear chicken until golden brown. Reduce heat, cover, and cook until internal temp reaches 165°F. Set aside.
Push mushrooms aside, add diced onion, and cook. Stir in garlic powder, oregano, nutmeg, and broth.
Add cream, simmer, then mix cornstarch with water and stir into sauce.
Add cheese, stir until sauce thickens, then return chicken to the pan.
Simmer for 2-3 minutes. Garnish and serve.
