This healthy Chicken Broccoli Rice Casserole is pure comfort! It reheats well, can be made ahead, and freezes perfectly in portions.
Preheat oven to 400°F and grease an 8x11 casserole dish. In a skillet over medium-high heat, sear chicken in 1 tbsp oil for 5-6 minutes. Set aside.
In the same skillet, heat the remaining oil and sauté onion until browned. Whisk in flour for about a minute.
Whisk in flour for a minute, then gradually add milk, stirring constantly. Mix in spices, salt, and black pepper.
Simmer on low until thickened, stirring occasionally. Remove from heat, add 1½ cups cheddar, and stir until melted.
In the casserole dish, mix rice, broccoli, chicken, and sauce.
