Stuffed Zucchini Boats are packed with creamy chicken parmesan flavors—an easy and stunning dinner your family and friends will love. Bake them in the oven or check out my grilling instructions for a delicious twist!

Step 1

Preheat oven to 400°F, grease a 9x13 baking dish, halve zucchinis, scoop out the flesh, chop half, and squeeze out excess water.

Place zucchini halves cut-side up, drizzle with oil, season, and bake for 15 minutes.

Sauté onion, add tomatoes, chicken, zucchini flesh, seasoning, and cream. Stir in Parmesan and simmer until thickened.

Fill zucchini boats, top with cheese, and bake for 10 minutes until melted.

Grill zucchinis flesh-side down for 5 minutes. Prepare the filling as above, stuff, top with cheese, and grill for another 5-10 minutes until bubbly.
