Kapusniak, our family’s sauerkraut soup, is a hearty, comforting dish perfect for chilly days. Simple, flavorful, and easily customizable to your taste!
Cook pork ribs in water for 45-60 minutes. Remove, shred meat, and set aside. Strain broth and clean the pot.
Sauté onion in oil until translucent, then add carrot and cook for 3-5 minutes.
Stir in black pepper, smoked paprika, caraway seeds, marjoram, and garlic powder. Add tomato paste and cook for 30 seconds.
Add potatoes and bay leaves to the broth. Boil, then simmer for 12-15 minutes until potatoes are almost tender.
Add sauerkraut with juices, cooked vegetables, and spices. Simmer for 25 minutes.
Adjust seasoning, return shredded pork, and cook for 5 minutes. Remove bay leaves and serve with sour cream.
