Salmon Bake combines seafood and veggies in a creamy, cheesy, low-carb dish—like potatoes au gratin but without pasta!
Preheat oven to 400°F (200°C) and grease a 1- 1.5L baking dish. Boil cauliflower for 4-5 minutes, drain, and set aside.
Melt butter in a skillet, whisk in flour.
Gradually add milk and cream. Stir until smooth, season with salt, pepper, nutmeg, and lemon juice.
Pour ¼ cup sauce into the dish.
Add cauliflower and salmon, then top with remaining sauce.
Bake for 30 minutes, covering with foil if browning too much.
