Chicken breasts in a creamy sun-dried tomato sauce with spinach, smoked paprika, parmesan, and crispy bacon. This Creamy Tuscan Chicken is a restaurant-quality dish and a true winner!
Chop bacon and cook in a dry pan until crispy. Set aside.
Cut chicken in half lengthwise, pound evenly, and season. Cook in oil and butter for 3 minutes per side until golden. Set aside.
In the same pan, sauté onion, sun-dried tomatoes, and garlic until fragrant. Add spinach and cook until reduced.
Pour in chicken broth, bring to a boil, then add cream. Season with salt and pepper. Simmer until thickened.
Return chicken to pan, cook 2–3 minutes. Stir in parmesan, top with bacon, and garnish with parsley.
