This easy pickled cabbage recipe comes together in minutes! Just pour warm brine over sliced cabbage, chill for 12-24 hours, and enjoy its perfect sweet, zesty, and tangy flavor.
Prep the cabbage and beets. Remove outer leaves, core, and cut cabbage into 1½-inch slices or shred. Slice beet thinly.
Layer cabbage, beet, and garlic in sterilized jars, repeating until full.
Make the marinade. Boil sugar, salt, peppercorns, bay leaves, and 6 cups of water for 3 minutes. Remove from heat, stir in vinegar, and let cool for 1 minute.
Pour warm marinade over cabbage, submerging fully. Leave 1 inch of space at the top and seal the lids.
Let cool for 5 hours, then refrigerate for 24 hours. For deeper flavor, marinate for 2 days before serving.
