These Thai Red Curry Noodles with chicken are a quick 15-minute dinner, packed with bold flavors, tender chicken, coconut milk, rice noodles, spices, and lime juice!
Cook rice noodles as directed.
Sear chicken strips over high heat, then add onion and red curry paste, stirring well.
Add bell pepper, garlic, and ginger. Cook briefly.
Then pour in coconut milk. Mix lime juice, fish sauce, soy sauce, and brown sugar in a bowl, then add to the pan.
Bring to a boil, add noodles, then reduce heat and simmer for 5 minutes with the lid on. Top with lime wedges and sesame seeds. Enjoy!
