A delicious way to enjoy veggies! This roasted asparagus with parmesan and caramelized tomatoes bakes to perfection in under 20 minutes. A quick, low-carb favorite!
Preheat oven to 400°F. Rinse asparagus and trim the woody ends.
Place asparagus on a lined sheet pan. Drizzle with olive oil, then season with salt, pepper, onion, and garlic powder. Toss to coat.
Toss tomatoes with olive oil, salt, and pepper. Arrange asparagus on one side and tomatoes on the other.
Sprinkle parmesan over asparagus. Bake for 10-15 minutes until asparagus is deep green, cheese melts, and tomatoes brown slightly.
Enjoy immediately with fresh basil, lemon juice, sea salt flakes, and balsamic glaze (optional).
