Crisp, colorful, and incredibly refreshing, this easy marinated cucumber, carrot, and zucchini salad is tossed in a simple yet flavorful olive oil and balsamic vinegar dressing.
Mix sugar, salt, oil, and vinegar in a bowl. Add veggies and stir to coat.
Transfer to a jar, seal, and refrigerate for 1–2 hours. Shake occasionally.
Sprinkle with parsley before serving, or add it in while marinating.
