These dairy-free, gluten-free no-bake raspberry cookies are rich, chocolatey, and vegan! Made with oat flour, dark cocoa, maple syrup, peanut butter, freeze-dried raspberries, and dark chocolate chips—easy and delicious!
Line a baking sheet with parchment paper. Sift flour and cacao in a bowl, then mix in maple syrup and peanut butter until crumbly.
Fold in dried raspberries and chocolate chips. Gradually add milk until thick.
Shape into 8-9 balls, place on the sheet, and flatten into disks.
(Optional) Press extra raspberries on top for added crunch and sweetness.
Chill in the fridge for 20-30 minutes. Enjoy!
