Sausage dirty rice is a flavorful one-pot Louisiana dish with jasmine rice, Cajun seasoning, veggies, broth, and sausage—perfect for easy weeknight dinners!
Cook sausage in a skillet over medium-high heat, breaking it into small pieces. Drain fat and set aside.
Sauté onion, bell pepper, and celery in the same skillet. Add garlic, Cajun seasoning, salt, and pepper; cook for 30 seconds.
Add washed rice, broth, bay leaves, thyme, and cooked sausage to the skillet.
Bring to a boil, cover, and simmer on medium-low for 18 minutes until the rice is cooked.
Fluff rice, remove thyme and bay leaves, and serve with green onions.
