A traditional Cheesy Potatoes (Au Gratin) is a side dish recipe that will complement any main course like pork, beef, poultry, and also seafood.

Melt butter in a skillet/pan over medium heat.

Stir in the garlic.

Gradually add flour (constantly whisking) until a roux has formed.

Slowly stir in the veggie broth.

Stir in milk, 1/2 cup at a time and whisk until creamy.

Finally, add in the cheddar,

and whisk until cheese is fully melted, set aside.

Layer the potato slices in an 9x13 inch baking dish.

Add onion in between, Season with salt, pepper, dried thyme.

Pour the sauce on top, cover with foil and bake 1 hours 15 minutes at 350 F. 

Remove foil and top with mozzarella. Bake another 10 or so minutes until cheese is almost melted.
