Easy  Quesadilla  Recipe

These Mexican Quesadillas are loaded with black beans, sweet corn, and two kinds of gooey melted cheese. Soft tortillas are then lightly toasted on a skillet until crisp.

Gather ingredients: black beans, sweet corn, red onion, parsley or cilantro, red chili pepper. mozzarella and cheddar cheese, tortillas, seasoning.

Heat some cooking oil in a medium pan over medium-heat. Once hot saute onion, garlic, and chili. Follow with black beans and corn and cilantro. 

Stir constantly until warmed through, set aside. In the same pan add tortilla one at a time and stuff with filling.

Fold the tortilla, press the top down slightly and cook until golden brown and cheese melted.

Serve with  Pico De Gallo on the side
