Eggplant Dip Recipe

Eggplant Caviar is a terrific smoky roasted eggplant dip! Perfect to spread over crackers for an easy, healthy, delicious appetizer.

Ingredients: eggplant olive oil onion tomato paste salt sugar pepper, ground garlic 

Roast the eggplants in oven until soft.

Let cool don and peel off the skins. Dice into cubes.

Meanwhile in a pan fry onion, add tomato paste, garlic, seasonings. Add in the eggplant and cook stirring for 7-9 minutes.

Take off from heat, garnish with fresh parsley and serve immediately with crackers, pita bread, crostini\s and so on.
