Enjoy a Healthy Summertime Dip

This tasty Roasted Summer Squash Spread is easy to make, vegetarian, and full of flavors. 

Ingredients: summer squash carrots red bell pepper garlic  white onion tomato paste olive oil salt pepper nutmeg parsley

Prepare the seasoning mix by whisking together tomato paste, salt, pepper, olive oil, nutmeg.

Transfer the veggies to oven-safe cooking bag and add garlic.

Top with seasoning mixture.

Close the bag and massage until all the veggies are covered in the seasonings.

Poke the bag with a toothpick in several places. Bake at 350 F for 50 minutes.

Transfer to a pot, top with the rest of garlic and blend until smooth. Take the mixture to a boil and remove from the heat.

Serve warm or cold with pita bread, crackers or veggies on the side.
