Thaw cod if needed, pat dry, and preheat oven to 400°F. Mix olive oil, salt, pepper, and herbs; coat veggies and cod.
Place veggies in foil, seal, and bake for 15 minutes.
Open packets, top with cod, butter, and a lemon slice.
Bake for another 15-20 minutes until fish is flaky and veggies are tender. Serve with lemon wedges and chimichurri sauce.
