Light, fluffy, and moist, this gluten-free banana cake is easy to make in one bowl!
Preheat oven to 350°F (180°C) and grease a 7” or 8” pan. Whisk eggs and sugar, then mix in banana, vanilla, oil, and coconut.
Stir in oats. In a separate bowl, mix flour, baking soda, and salt, then combine with wet ingredients.
Pour batter into the pan and bake for 30 minutes. Let cool for 10 minutes.
Melt chocolate with oil, transfer to a piping bag, and drizzle over the cake.
Sprinkle with coconut or drizzle with honey. Slice and serve.
