Whisk the eggs, add milk or heavy cream, salt, and pepper, cheese. Cook onion, garlic for a few minutes and add mushrooms. Follow with spinach and cook until spinach reduced in size.
In the same pan, cook bacon. Once fully cooked, take out the bacon and set aside. Add the veggies and bacon to the 8 or 9-inch cake pan.
