In food processor blend spinach leaves into an almost paste-like mixture. Transfer to a bowl.
Add egg, season with salt and pepper, and stir in the ground chicken. If too watery, add up to 2 tablespoons of gluten free breadcrumbs. Set aside for a couple of minutes.
Spoon the ''batter'' into the greased with oil pan ring and even it out so it becomes about ½ inch thick. Remove the ring and repeat with the rest.
Bake for 10-15 minutes at 350 F. Let cool to touch and spread a layer of tomato sauce, tomato and decorate with cheese sticks as on the picture. Olives make a great mummy pizza eyes!
