These zucchini oatmeal muffins are one of my favorite ways to sneak veggies into something sweet and totally snack-worthy. They’re soft, hearty, and just sweet enough—with ripe banana, a drizzle of honey, and plenty of melty chocolate chips in every bite.
1. Grate the zucchini and thoroughly squeeze it using a paper towel to remove excess water. Repeat as necessary.
1. Whisk together banana, honey, sugar, olive oil, and vanilla extract in a large mixing bowl until smooth.
1. Add the eggs, one at a time, and whisk again until combined.
