Place potatoes on a baking sheet and drizzle with olive oil and seasonings.

Bake for 10-15 minutes at 425 F. Let potatoes cool down and stir in the pesto.

Add the rest of the ingredients: chives, pesto, more salt and pepper if needed, lemon juice, radishes and cucumbers. 

Garnish and enjoy while warm!
