Boil water and pour over dates.
Soak dates for 10 minutes (quick) or up to overnight (longer), then blend with ¾ cup water until smooth.
Blend using a blender, food processor, or immersion blender (preferred).
Store in a covered container—yields 1¾ cups date paste!
