Quick Almond Cake

Almond Flour Sponge Cake is the perfect combination of sweet and nutty flavors, with a delicate texture that is sure to please your sweet tooth cravings. Not only is almond cake delicious, but it’s also packed with nutrition. 

Combine melted butter, eggs, vanilla, almond extract, and lemon zest. Whisk until just combined. Set aside.

In a separate bowl, combine together almond flour, coconut, salt, and caster sugar. Add the dry ingredients to the wet ingredients bowl.

Beat on low until combined. Pour the batter into the greased 8 inch cake pan. I lined mine with parchment paper instead.

Sprinkle generously with almond flakes and bake for 50 minutes or until a toothpick inserted into the center comes out clean.

Serve the cake with dusted icing sugar on top, custard, or dollop of your favorite ice cream and coulis or berry jam.
